Hello Le Midi subscribers!

Now that we are catching a break with balmy 20-degree temperatures, we hope we are going to see plenty of your bright, shining faces in! We know how hard it is to leave your cozy homes during this time of year, and we are so thankful to those who still brave the cold to say hello to us.

Since dry-January seems to be going pretty strong this year, we wanted to remind you that we do carry fantastic zero-proof wines from the German winery Weingut Leitz. We have a strong following from our non-alcohol drinking customers who come in seeking this gem out. The three we offer are a de-alcoholized still and sparkling dry Riesling, and a more fruit-forward (but still dry) sparkling Pinot Noir. These are all quite delicious and we serve all of them by the glass, so come on in and enjoy the space without breaking your January commitment!

Cider of the Week

The Cider Farm “Classic Dry”,
Mineral Point, Wisconsin

Le Midi loves to focus on its wine selections, but don’t forget that we have also spent heaps of time seeking out great beers and ciders as well. After trying multiple bottled ciders, it was evident that The Cider Farm was a standout.

The Cider Farm's journey is driven by the passion of Deirdre Birmingham (who oversees the orchard with three degrees in agriculture under her belt), while her partner John Biondi manages the business. Almost two decades ago they began this venture on their farm in southwestern Wisconsin while facing the unique challenge of finding any suitable tannic English and French apple varieties. They dedicated themselves to the painstaking process of hand-grafting their first trees, creating the foundation for what would become the inimitable Cider Farm orchard.

Each fall they hand-pick fully ripe apples and press them to juice on the farm without any use of machinery, pesticides, or herbicides. Managing The Cider Farm organically takes time and attention (and oodles of money), but they anticipated this in their pursuit of creating something rare and special that sets them apart from any other cider producer. At the heart of their craft are the English and French cider apples, historically not cultivated in America and considered extremely rare. They've learned to grow these apples recognizing that they are meant for drinking, NOT eating. Eating one of these would undoubtedly make for a fantastically humorous Instagram photo.

One shining example of their commitment to the apples is the Classic Dry Cider which you can now find at Le Midi. It is a blend of five English cider apples known for their tannin profiles: Major, Kingston Black, Somerset Redstreak, Chisel Jersey, and Dabinett. The base apple Liberty is a tart variety developed by Cornell University which provides the necessary acids and sugars to blend with the highly tannic heirloom selections. The result is a stunningly complex but extremely approachable dry cider that is unlike any other we’ve tried. We like to think of it as a cider for Champagne-lovers.
