For those who were going to join us for the Dimo’s Café wine dinner this past Monday, sadly we were forced to cancel last minute as our chef came down with COVID. We have moved it to next Monday the 29th, so if you are able to attend, seats are still available! Find the link at the bottom of this newsletter.

Just a quick note to our wine club members: we have a week before the next allotment comes out and we have a lot of January clubs that haven’t been picked up. Please come in and grab them soon so we can make space in our little store for the next selections! If you cannot pick them up this month, please let us know so we can set them aside for longer storage.

Dry January is almost over and we cannot wait to see some of our regular wine-loving smiling faces back in soon!

The Language of Yes “Les Fruits Rouges”

Let us welcome Randall Grahm's latest venture, "The Language of Yes," where the original "Rhône Ranger" pioneers a new project focusing on rare varietals from the south of France. Renowned for his maverick moves in California viticulture, Randall's legacy is deeply rooted in progressive winemaking, exemplified by his previous success with Bonny Doon. Against popular belief at the time, Randall went full-force into biodynamic winemaking and helped revolutionize California viticulture overall.

"The Language of Yes" pays homage to the Languedoc region of France, cleverly incorporating an English play on words. This project explores varietals not previously embraced by Bonny Doon, with a particular emphasis on Provence. The rosé, inspired by the famous winery Clos Cibonne, features the Tibouren grape – a standout choice that sets it apart from other Provence rosé producers. Blended with the unsung hero Cinsault, this wine is a departure from bulk-production styles, offering a serious and distinctive rosé experience.

The winemaking philosophy behind "The Language of Yes" is rooted in minimal intervention and a commitment to expressing the unique qualities of the Tibouren grape. Techniques such as passerillage (post-harvest drying of grapes) are employed to bring forth layers of complexity. Reductive élevage, a practice aimed at protecting the fruit and freshness of the wine, contributes to the development of complex earthy notes. Small vessels like 5-gallon carboys are used during élevage, facilitating efficient autolysis of yeast lees and enhancing the wine's creamy texture and length.

This medium-bodied "Pink Wine," as affectionately referred to by the winemaker, beautifully captures the essence of Provence rosés while staying true to its California roots. Expect vibrant notes of ripe strawberry, guava, and watermelon, complemented by a splash of salty minerality and dried Provence herbs. Perfect for pairing with cheese and meats, "The Language of Yes" represents a unique and sophisticated addition to the world of California winemaking.

We love BLANKbottle wines for many reasons. Not only are they delicious, they are uniquely works of art sculpted by the mad-scientist winemaker Pieter Walser. This white blend of…oh wait, I can’t tell you the blend. Walser never wants to reveal the grapes on the label so the taster doesn’t go into the experience with any prejudices. Suffice it to say, this is an incredible white blend that was inspired by Walser undergoing an experiment where EEG electrodes detected his brainwaves while he was thinking about what blend will be best. The final result are the grapes that got the most colorful responses when he thought of them together. Ironically coming from the single-vineyard named “Les Jardins de Meunier”, this Blanc de Blancs definitively has no Pinot Meunier in it, and is simply singing right now. Antoine is a young grower-producer who farms 2.5 hectares of grapes under strict biodynamic principles making singular wines from his favorite parcels. The extra-brut “Carkonnia” is a richer Chardonnay having been vinified and aged for 24 months in wooden barrel. It’s plush and creamy but still electric with a soft and uplifting perlage. It’s a real showstopper, and very limited as only 1200 bottles were produced!

Ioppa you like this wine as much as we do! *giggle*
Dad-jokes aside, the best part about this wine is actually the wine itself. This Alto Piemonte style of Nebbiolo is quite different from what you’ll find in the Langhe. Different soil types and climate give way to much lighter and spry Nebbiolos that are a pleasure to drink immediately. Fermented and aged in stainless steel, this wine is all about preserving the pristine aspects of the varietal and the unique terroir of Collina Novaresi. No need to cellar this beauty anymore - pop it open and serve it with a bit of chill to the bottle.
